Caught “Pink-Handed”!

While interviewing a number of fellow campground residents, our suspicions were confirmed, and we discovered the identity of the perpetrator of the mysterious flamingo deliveries….our wonderful friend, Becky, who has been scouring every store in north Florida for the elusive pink flamingo, ever since I mentioned that I had been searching in vain for months.

When Becky “came clean” with her story, she told us that she spotted the first little guy in a landscape and garden shop in Live Oak, and since he was the only pink flamingo she’d seen on her quest, she scooped him up and delivered him in the dead of night, about a week ago.

But, Becky is not one to stop until she reaches her ultimate goal, and even though she’d rounded up one bird, she continued looking for a pair.

Two days ago, while meandering down the aisles at the Dollar General in White Springs, her hunter instincts picked up the trail of a new shipment of flamingos, stowed away on a top shelf, waiting for spring.

Oh yes, the birds were big and beautiful and screaming loud pink – they were perfect!

So, she picked a pair and once again, in the dead of night, dropped the birds off at our campsite…and waited for daylight.

Now, I have to tell you that Becky is one of the most kind and thoughtful people I’ve ever met. She is always doing sweet little things for people, in addition to her flamingo drops.

You never know when she’ll be at the door with fresh baked banana bread, butter beans, or cornbread and greens.

She keeps herself busy (when she’s not out searching for flamingos) with huck embroidery, which is beautiful, and I am happy to say that I was recently gifted with a beautiful tea towel decorated in burgundy –  looks great in our kitchen.

Becky had a birthday last Sunday, and a group of us gathered to celebrate with “Strawberry Pie, My Oh My”, a recipe from my youngest sister’s Low Carb Cafe cookbook….delicious!

Here is a snapshot of Becky and her birthday pie, before we added the cool whip topping…only had one candle in the house, but we figured it was big enough to count for the all the rest!

Happy Birthday again, Becky….thank you for the flamingos, and for being our friend!

Here is the recipe for the strawberry pie, which is delicious, easy to make, and low carb too. Enjoy 🙂

Strawberry Pie, My Oh My

24 oz. strawberries

1 small pkg. sugar-free vanilla pudding (cook & serve)

1 small pkg. sugar-free strawberry jello

2 cups water

Rinse and slice the strawberries into the pie plate. They will probably fill the whole plate.

Combine pudding mix, jello and water in a saucepan. Stir well and bring to a boil.

Pour over strawberries and refrigerate immediately, for at least 4-6 hours. (I usually make this the day before serving)

Slice and top with whipped cream just before serving.

(Approximately 4 grams net effective carbohydrates per serving).

Note: Never fear, people who hate the taste of artificial sweeteners…this pie is mostly strawberries, so you REALLY can’t taste the sweetener, and it’s nice to be able to share a dessert with a friend who needs a low carb treat.
