Just the Two of Us

As I’ve mentioned before, life in Truth or Consequences, New Mexico, runs on its own time.

For Keith and me, Thanksgiving 2012 is a perfect example.

Tomorrow, on “Calendar Thanksgiving”, we will be welcoming guests at Riverbend Hot Springs from 7:30 a.m. to 3:30 p.m., and squeezing in just enough time for a plate of food from the pot luck on the hot springs patio, at 2 p.m.

So, in order to make sure that we didn’t miss out on a more traditional meal, we decided to cook up our own Thanksgiving dinner today, for just the two of us.

We figured that if retailers could move Black Friday forward to Thanksgiving Day, we were actually serving our meal on “New Thanksgiving Day”!

We fixed turkey, stuffing, mashed potatoes, gravy, green bean casserole, cranberry sauce and pumpkin pie, accompanied by a glass of Elderberry Wine from the “Me and My Baby Cellars”.

Delicious!

Now that the leftovers have been packed away, and the turkey carcass is simmering on the stove, for broth, we can sit back and relax, and send out our most heartfelt wishes that your Thanksgiving 2012 will be the best ever ~ whenever you may celebrate it!
